We all know breakfast is the most important meal of the day and nothing says breakfast like toast! Today I’m sharing a few of my fave go-to jazzed up crispy, crunchy delights. These are quick, easy to whip up and full of flavor breakfast options that are sure to break up the monotony of your usual run-of-the-mill morning picks. So grab your bread of choice- I usually opt for whole wheat – and get on these pronto!
GARLIC MARGHERITA TOAST
This toast is perfect when you want something savory and robust! To make, spread a thin layer of softened butter and minced garlic on sliced bread then cover entire piece with sliced mozzarella cheese (I use Miyoko’s vegan mozz). Top the bread with freshly sliced tomato and season with salt, pepper and red chili flakes, then sprinkle with fresh basil. Pop it into the oven for a few minutes until cheese is melted and bread is lightly toasted. Once out of the oven drizzle with a little balsamic vinegar and you’re all done. Pizza for breakfast? Count me in!
BANANA + ALMOND BUTTER COCONUT TOAST
Slather creamy almond butter all over your toast then top with banana slices. Add coconut flakes over the bananas. Finish it all off with a sprinkle of cinnamon and I usually like to add some chia seeds for a nice contrast.
BLUEBERRY ALMOND CREAM CHEESE TOAST
Spread cream cheese (I use Kite Hill vegan version) on top of your toast. Add on some fresh blueberries and sprinkle with slivered almonds. (Optional- top with chia seeds for an extra boost of fiber and omega 3s!)
AVOCADO AND RADISH TOAST
Spread avocado on top of your toasted bread. Pile with thinly sliced radish then drizzle with fresh lemon juice. Season with salt and pepper to taste and you are on your way to toast heaven!
